FOR THE MEATBALLS
1½ cups day-old bread cut into
2.5cm cubes
1⅓ cups milk
¼ cup extra-virgin olive oil, plus extra for drizzling
1 small yellow onion, finely diced
5 garlic cloves, finely diced
4 tsp fennel seeds, crushed
3 tbsp finely chopped oregano leaves
1 carrot, finely diced
900g ground pork
¾ cup finely grated parmigiano reggiano, plus extra for serving
1 extra-large egg, beaten
¾ cup finely chopped flat-leaf parsley
2 tsp kosher salt, or sea salt
2 tsp ground white pepper
