Seared Duck Breast with Nashi Pears and Honey
SERVES 2 PREP 10 MINS COOK 45 MINS
■ 2 x Luv-a-Duck raw duck breasts
■ 1 tblsp dry vermouth or dry white wine
■ Micro herbs, to garnish
ROASTED PEARS
■ 2 nashi pears, halved, cored
■ Juice of 1 lemon
■ 4 whole star anise pods
■ 2 tblsps honey
Preheat oven to 180C. Cut 4 pieces of baking paper and aluminium foil enough to cover pears.
