STICKY TOFFEE-ANDGINGER BREAD PUDDING

“This is dense, sticky and rich in dates, molasses and fiery ginger spice with a luscious layer of salted ginger caramel sauce. It's a sticky toffee pudding for the books!”

Preparation: 45 minutes
 Cooking: 1 hour

salted butter 125 g, at room temperature
 Muscovado sugar 150 g
 large free-range eggs 2
 golden syrup 1 T
 molasses 1 T
 vanilla extract 1 t
 self-raising flour 150 g
 ground ginger 1 t
 Medjool dates 100 g, chopped
 water 1 cup
 bicarbonate of soda 2 t
 vanilla ice cream or cream, for serving

For the ginger caramel sauce:

salted butter 100 g  150 g  3 T  2⁄3 cup  a generous pinch  1 t  1 T finely grated
