PREP 5 MINS COOK 5 MINS SERVES 1 (AS A BREAKFAST)

2 x 60g eggs
2 tbsp light milk Freshly ground black pepper
2 slices wholemeal bread or gluten-free bread, toasted, to serve Handful baby spinach leaves, to serve

1 Put the eggs and milk in a microwave safe jug. Season with pepper. Whisk well to combine. Cook in the microwave on High/100% for 30 seconds, then whisk again and return to the microwave for a further 30 seconds.
