1 Lebanese cucumber, diagonally sliced
½ red onion, finely sliced
2 small (28g each) pita or gluten-free flatbread, cut into thick strips
FALAFEL
75g baby spinach leaves
½ x 420g can no-added-salt chickpeas, drained and rinsed
1 clove garlic, chopped
½ tsp ground cumin
¼ small bunch flat leaf parsley, finely chopped
1 tbsp plain flour or gluten free plain flour Freshly ground black pepper
2 tsp olive oil, plus 1 tsp, extra for rolling
HUMMUS
½ x 420g no-added-salt chickpeas, drained and rinsed
1 tbsp olive oil, plus extra, to serve
1 clove garlic, roughly chopped Juice of half lemon, plus extra to serve
