These days, it’s hard to find good smoked fish that hasn’t got sugar or preservatives and even colour added, or isn’t in a tin. Sad. So, if you can smoke your own or hunt down the good stuff, that’s choice.

SMOKED KAHAWAI HASH BROWNS

500g medium potatoes
2 cups water
500g smoked kahawai or any fish
1 tsp each salt and pepper (optional)
1 egg
2-3 cups coconut oil

Preheat the oven to 180°C fan bake.

Scrub the potatoes, keeping them whole, then place in a roasting dish with the water. Cover. Place in the oven and cook for 45-60 minutes. They shouldn’t be cooked all the way through. Cook until they’re still a little underdone. Test with a skewer or knife. They should still have some firmness or
