BEEF AND MUSHROOM HOKKIEN NOODLES

SERVES 4 PREP AND COOK: 20 MINS

450g packet thin hokkien noodles
500g lean beef rump steak, thinly sliced
500g punnet sliced mushrooms
6 green spring onions, thinly sliced diagonally, plus extra to serve
⅓ cup oyster sauce
1 tblsp honey

1 Prepare noodles according to packet directions. Drain. Cover to keep warm.

2 Heat a lightly oiled, large wok over a high heat. Add beef in three batches. Stir-fry for about 2 minutes, or until evenly browned. Remove.

3 Add mushrooms to same oiled wok over a medium to high heat. Stir–fry for 3 to 4 minutes, or until lightly browned and tender.

Return beef to wok with noodles, onions, oyster sauce
