BALSAMIC-GLAZED CHICKEN

SERVES 4 PREP 20 MINS COOK 35 MINS

2 tbsp olive oil
8 chicken lovely legs or drumsticks (see Tip)
½ cup verjuice
2 garlic cloves, crushed
2 tbsp maple syrup
2 tbsp balsamic vinegar
4 yellow peaches, stone removed, quartered
100g baby rocket
1 radicchio, torn
2 tbsp extra virgin olive oil
baby sorrel leaves, to serve

BLUE CHEESE DRESSING

150g blue cheese
½ cup sour cream
¼ cup buttermilk
1½ tbsp apple cider vinegar
1 green onion, thinly sliced
