BALSAMIC-GLAZED CHICKEN
SERVES 4 PREP 20 MINS COOK 35 MINS
• 2 tbsp olive oil
• 8 chicken lovely legs or drumsticks (see Tip)
• ½ cup verjuice
• 2 garlic cloves, crushed
• 2 tbsp maple syrup
• 2 tbsp balsamic vinegar
• 4 yellow peaches, stone removed, quartered
• 100g baby rocket

BLUE CHEESE DRESSING
• 150g blue cheese
• ½ cup sour cream
• ¼ cup buttermilk
• 1½ tbsp apple cider vinegar
