VegOut (VO): What initially inspired you to adopt a plant-based diet in 2016?
My then boyfriend (now husband) wanted to go plant-based after reading , Rich Roll’s autobiography. [Anthony] is a very athletic person, and he’s always been concerned about his health. His father had just passed away from a host of autoimmune issues. And I think he felt some of those issues may have been exacerbated by his father’s diet. He didn’t want to make the same mistakes, so he went plant-based. [Anthony] basically told me “I’m gonna do it, I don’t care if you do it.” But I could tell that he did care. So I did a lot of research on [plant-based foods], watched a lot of videos, and read Rich Roll’s book as well. Based on a lot of different things, I decided to give it a try. When I was experimenting with [veganism], my father [was diagnosed] with prostate cancer, which I read in my research was likely linked to his increased consumption of red meat.
