Sweet potato & quinoa chilli

■ Serves 4 ■ Prep 10 mins ■ Cook 45 mins

VEGETARIAN

1 large onion, finely chopped
 2 garlic cloves, crushed
 1 tbsp olive oil
 1 tbsp mild chilli powder
 1 tsp ground cumin
 about 750g sweet potatoes, peeled and cubed
 100g quinoa, soaked in cold water for 10 mins, and drained
 400g can chopped tomatoes
 600ml vegetable stock
 400g can black beans, drained and rinsed
 small bunch of coriander, to serve
 soured cream or yogurt or coconut yogurt, to serve (optional)
