10 ways with a can of tomatoes
1 TOMATO & BASIL SOUP
■ Cook 1 chopped onion, 1 grated carrot, 1 chopped celery stick and 1 crushed garlic clove in 1 tbsp olive oil until softened. Add 400g can chopped tomatoes and 200ml vegetable stock. Simmer for 15 mins. Whizz in a blender. Stir in 2 tbsp double cream and a handful of chopped basil. Serves 2.
