CAULIFLOWER & HAM PASTA BAKE

▸ 500g penne pasta
▸ 1 cauliflower, cut into florets
▸ 1 tub (300g) sour cream
▸ 250ml (1c) thickened cream
▸ 250ml (1c) cheese, grated
▸ 125ml (½c) chopped parsley
▸ salt and pepper
TOPPING
▸ 750ml (3c) fresh breadcrumbs
▸ 150g ham, finely chopped
▸ 125ml (½c) grated Parmesan cheese
▸ 15ml (1T) thyme leaves
TO SERVE
▸ chopped parsley

Preheat the oven to 200°C.
1 Pasta In a large saucepan of boiling, salted water, cook the pasta for 5 minutes. Add the cauliflower florets to the same saucepan and cook for a further 5-7 minutes until the pasta is tender.
