Mixing it up

Originally from Argentina, Geo Mangiaterra Tompkins, a bubbly, creative chef and baker at Auckland’s Ripe Deli, has taken an authentic favourite from her homeland and turned it into a delightful, tasty pasta salad. Dairy free, it’s perfect as an easy dinner.

GEO’S CHORIZO AND CHIMICHURRI PASTA SALAD

CHIMICHURRI

1 cup fresh parsley, leaves and stems roughly chopped
½ cup fresh coriander, leaves and stems roughly chopped
small bunch of fresh oregano or 1 tbsp dried oregano
2 cloves garlic, peeled, crushed and finely chopped
1-2 fresh chillies, deseed if you don’t like it spicy
1½ tbsp red wine vinegar
¼ cup extra virgin olive oil
salt and freshly ground black pepper

SALAD

400g of your favourite pasta
