ROASTED SPROUTS, CANDIED WALNUTS & BACON

SERVES 6 PREP 10 MINS COOK 35 MINS

1kg brussels sprouts, trimmed
3 rashers rindless bacon, cut into batons
¾ cup walnuts
2 tbsp maple syrup
2 tbsp parsley, chopped

1 Preheat oven to 220°C.

2 Bring a large saucepan of water to the boil. Blanch sprouts 5 mins or until vibrant green. Drain, then transfer to a tray.

In a small frying pan, heat 1 tbsp olive oil over medium heat. Add bacon and cook 10 mins, stirring, or until crispy. Remove with a slotted spoon,
