GARLIC PANCETTA SPAGHETTI
This dish is simple, but it is excellent when time is of the essence!
SERVES 4
Preparation time: 5 minutes Cooking time: 15 minutes Can be frozen
■ 10Og (3½oz) pancetta, diced
■ 4 cloves garlic, minced
■ ½ lemon, juice of
■ 300g (10oz) spaghetti
■ 100g (3½Oz) grated Parmesan
■ A good grinding of pepper
■ 1 cup pasta cooking water
■ 1 tbsp olive oil
■ 1 bunch of parsley
1. Bring a large pan of water to the boil and cook the spaghetti for 7-10 minutes.
