TIME TO MAGIC UP SOME MEALS FOR MAY

PEA & ASPARAGUS PASTA WITH GOAT’S CHEESE

A creamy pasta dish with delicious green spring vegetables in a goat’s cheese and white wine sauce.

SERVES 6

Preparation time: 10 minutes

Cooking time: 20 minutes

FOR THE SAUCE

■ 4 tbsp plain flour
■ 60g (2oz) butter
■ 1 shallot, sliced
■ 400ml (14fl oz) milk
■ 75ml (2½fl oz) dry white wine
■ 100g (5oz) goat’s cheese plus extra for serving
■ A small grating of nutmeg

FOR THE PASTA

■ 600g (21oz) tagliatelle
■ 150g (5¼oz) peas
■ 200g (5¼oz) asparagus, sliced
■ Salt and pepper to taste
■ Mint leaves to garnish
