1 pound Canadian bacon, cut into ½-inch cubes
14 large eggs, divided
2 cups whole milk
1 cup shredded Gruyère cheese
1 cup shredded Swiss cheese
1 cup heavy whipping cream
1 tablespoon plus 1 teaspoon chopped fresh thyme, divided
2 teaspoons kosher salt
1 teaspoon ground black pepper
10 cups cubed sourdough bread (about 1 pound)
