■ 500g dried mixed fruit
■ ¼ cup glace ginger, finely chopped
■ 185g unsalted butter, chopped
■ ¾ cup firmly packed brown sugar
■ ¼ cup apple juice
■ 2 tblsps golden syrup
■ 1 tblsp ground ginger
■ 2 tsps ground cinnamon
■ 1 tsp ground mixed spice
■ 2 eggs, lightly beaten
■ 1¼ cups self-raising flour
■ 1 cup plain flour
■ ¼ cup natural almonds
■ Icing sugar mixture, to decorate
