Makes good use of the bits and bobs from yesterday's canapes for a build-your-own brunch.

500g leftover mashed potato or well crushed roasties

110g plain flour, plus extra for kneading

50g oats

1tsp onion powder

1tsp sea salt

1 egg yolk

Zest of 1 lemon, plus extra zest and lemon wedges to serve

½ green
