Elderflower martini

A soft twist on the classic, the elderflower and lemon are complemented by the gin’s juniper.

MAKES 1 PREP 5 MINS COOK 0 MINS

50ml elderflower liqueur
(St-Germain)
50ml gin
15ml lemon juice

1 Pour into a shaker with ice. Mix to combine, then strain into a martini glass. Garnish with a green olive (optional).

125g plain flour, plus extra for dusting
100g lightly salted butter, cubed, plus extra for greasing
125g mature Cheddar, grated
1 egg yolk
Cayenne pepper (optional)

1 Preheat the oven to 190C/Gas 5. Grease two baking sheets. Put the flour and butter into a food processor. Blend until the mixture resembles fine breadcrumbs.
