Elderflower martini
A soft twist on the classic, the elderflower and lemon are complemented by the gin’s juniper.
MAKES 1 PREP 5 MINS COOK 0 MINS
✱ 50ml elderflower liqueur
(St-Germain)
✱ 50ml gin
✱ 15ml lemon juice
1 Pour into a shaker with ice. Mix to combine, then strain into a martini glass. Garnish with a green olive (optional).

MAKES 60 PREP 20 MINS, PLUS CHILLING COOK 20 MINS
✱ 125g plain flour, plus extra for dusting
✱ 100g lightly salted butter, cubed, plus extra for greasing
✱ 125g mature Cheddar, grated
✱ 1 egg yolk
✱ Cayenne pepper (optional)
1 Preheat the oven to 190C/Gas 5. Grease two baking sheets. Put the flour and butter into a food processor. Blend until the mixture resembles fine breadcrumbs.
