PREPARATION
For these smaller cakes and indeed for larger Christmas cakes, I recommend soaking the mixed fruit first to keep it moist. I use brandy for mine but if you are looking for a non-alcoholic version, orange juice or black tea works just as well. Simply tip the mixed fruits into a large bowl, pour over brandy, orange juice or black tea until saturated and then cover and leave overnight.
