How is it made?

Chocolate is made from cocoa beans. The beans, which contain fat (cocoa butter) and solids, are fermented, roasted, hulled, then ground to make the purest form of chocolate — chocolate liquor. The name is confusing because it’s neither liquid nor contains alcohol. This liquor (also known as cocoa solids) is unsweetened chocolate. To turn liquor into sweet chocolate, ingredients are added. Sugar, lecithin (a soybean-based emulsifier that keeps chocolate from separating when melted), vanilla, and extra cocoa butter may be used to make different qualities and types
