• ½ lemon, zested, plus wedges to serve • 2 tbsp chopped fresh rosemary • 3 tbsp olive oil • Tesco 672g pack 24 beef meatballs • 1 red onion, cut into wedges • 2 courgettes, thickly sliced • 1 red pepper, cut into chunks • 1 yellow pepper, cut into chunks • aioli, to serve (optional) • 8 long skewers • 250g Arborio rice • a generous pinch of saffron strands • 100g freshly grated Pecorino cheese • 100g young Pecorino cheese, cut into cubes • 100g cooked ham, cut into cubes • 100g passata, mixed with 2 crushed garlic cloves • handful of flat-leaf parsley, freshly chopped • 3 tablespoons Italian ‘00’ flour • 2 large eggs, lightly beaten • 150g dried breadcrumbs • olive oil or groundnut oil, for frying • sea salt and freshly ground black pepper • 2 x 500g red snapper • drizzle of olive oil • 2 pinches of rock or sea salt • 4 tbsp olive oil • 4 garlic cloves, thinly sliced • a handful of • 4 peaches, halved and stoned (nectarines or apricots works as well) • 1 x 75cl bottle sweet Muscatel wine • ½ cinnamon stick • 2 star anise • 5 juniper berries • ice-cream, clotted cream or natural yogurt, to serve (optional) • 600ml water • sea salt • a pinch of saffron fronds • 450g basmati long-grain rice, rinsed and drained • 2 tbsp each of dried barberries, dried sour cherries (or cranberries), currants, golden sultanas, raisins, granulated sugar, orange blossom water, freshly squeezed lemon juice, bitter orange peel, very finely sliced • 2 tbsp samna, or olive oil with a knob of butter • 120g blanched almonds, cut into slivers • 120g unsalted pistachio kernels, cut into slivers • 2 tbsp pine nuts • 2 tbsp dried apricots, finely sliced • icing sugar and rose petals • 100g shelled pistachios, unsalted • 450ml whole milk • 450ml double cream • 1 teaspoon pure vanilla extract • ¼ teaspoon sea salt, crushed • 100g golden caster sugar • 4 large eggs
