MAKES 8

1 carton of Walkers Highlander Shortbread

240ml (8½fl oz) milk

200g (7oz) strawberry purée

100g (3½oz) sugar

½ tsp vanilla extract

4-5 strawberries, puréed

1 Add the milk and sugar to a medium-sized saucepan and cook over a medium heat, stirring regularly until the sugar is dissolved. Set aside to cool.

2 Add the strawberry purée to a medium sized saucepan over a medium heat and cook until reduced by half, to about 1 cup.
