Christmas Morning Breakfast

Banana Bread Pudding

MAKES ABOUT 10 SERVINGS

If you like your breakfast bakes on the sweet side, this dish is for you.

1 (1-pound) loaf challah, cut into 1-inch cubes
4½ cups half-and-half, divided
¾ cup unsalted butter
1 cup firmly packed brown sugar
½ cup plus 1 tablespoon granulated sugar, divided
2 teaspoons ground cinnamon
¾ teaspoon ground cardamom, divided
1½ teaspoons kosher salt, divided
6 large eggs, lightly beaten
4 ripe bananas, sliced ¼ inch thick
1 cup pecans, coarsely chopped
2 cups confectioners’ sugar

1. Preheat oven to 350°. Spray a 13x9-inch baking dish with cooking spray.

2. In a large bowl, toss together bread cubes and 4 cups half-and-half.

3. Let stand at room temperature for 30 minutes.

4. In a large saucepan, melt butter over medium heat. Whisk in brown sugar, ½ cup granulated sugar, cinnamon, ½ teaspoon cardamom, and ½ teaspoon salt until combined. Remove from heat; whisk in eggs until combined. Pour over bread mixture. Add bananas and pecans, gently folding to combine. Spoon mixture into prepared dish. Sprinkle with remaining 1 tablespoon granulated sugar, and cover with foil.

5. Bake for 50 minutes. Uncover and bake until golden brown and a wooden pick inserted in center comes out clean, 10 to 15 minutes more. Let cool for 10 minutes.

6. In a small bowl, whisk together confectioners’ sugar, remaining ½ cup half-and-half, remaining 1 teaspoon salt, and remaining ¼ teaspoon cardamom. Drizzle over bread pudding before serving.

Hash Brown Skillet Casserole

MAKES 6 TO 8 SERVINGS

Filled with plenty of protein and fresh veggies, this all-in-one breakfast meal will become your new go-to.

2 tablespoons vegetable oil
1 pound ground breakfast sausage
1 (30-ounce) package frozen shredded hash brown potatoes (do not thaw)
1 cup sour cream
1 medium red bell pepper, seeded and diced
3 cups shredded extra-sharp white Cheddar cheese, divided
½ cup chopped green onion
½ cup whole milk
2 teaspoons spicy brown mustard
½ teaspoon kosher salt
8 medium eggs, divided
¼ teaspoon ground black pepper
Hot sauce, to serve
Garnish: sliced green onion

1. Preheat oven to 350°.
