LIMITED EDITION BONELESS GAMMON

R82.99/KG; CHECKERS

This gammon was deliciously juicy and tender, and had a rich meaty taste. The tasters were impressed by the smokiness of the meat – a sweet glaze formed a lovely flavour contrast. Succulent and delicious!

SANTA’S VILLAGE UNCOOKED BONELESS GAMMON

R89.99/KG; PICK N PAY

This gammon was rich yet not too heavy, and struck a good balance between smokey and salty, which should go well with a glaze. The tasters found the texture slightly dry.

ENTERTAINER SMOKED BONELESS GAMMON

R89.99/KG; FOOD LOVER’S MARKET

Our tasters thought this gammon looked appealing, but found it too salty and watery, and lacking in smokiness and depth of flavour. The cut had a high fat-to-meat ratio.

BIRCHWOODS PORK

R89/KG; MAKRO

This joint had a lovely shape and colour, and good marbling. The smokey flavour was mild, but our panel thought it was a bit too salty, so a glaze would complement the meat well. The texture was slightly dry and stringy.

UNCOOKED BONE-IN GAMMON

R89.99/KG; WOOLWORTHS

This gammon was the out-and-out favourite. It was packed with flavour and well seasoned, had a good fat-to-meat ratio, and struck the perfect balance between salty and smokey. It was succulent and tender.

LIMITED EDITION BONE-IN GAMMON

R76.99/KG; CHECKERS

This gammon looked magnificent once cooked. The good shape, colour and substantial layer of fat made it beautifully succulent and flavourful. The meat also looked appealing when sliced. The tasters enjoyed the delicate smokiness.

✸✸✸

BONE-IN SHOULDER GAMMON

R72.99/KG; SPAR

This dark-coloured gammon looked lovely and had a good balance of smokiness and seasoning. The tasters found it tasty, if a little dry. The meat carved very well, but was slightly crumbly.
