ADD A LITTLE FRENCH FLAIR WITH THIS CLASSIC CROQUE MADAME, MADE WITH THICKLY-SLICED HAM AND PLENTY OF GRUYERE
HAWAIIAN JAFFLE
SERVES 4
You will need a jaffle maker for this recipe.
8 slices square white bread
60g unsalted butter, softened
300g thinly sliced leftover ham
¼ small pineapple, thinly sliced
1 cup (100g) grated mozzarella
½ tsp dried oregano
½ tsp chilli flakes, plus extra to serve
⅓ cup basil leaves, plus extra to serve
Preheat a jaffle maker.
Spread one side of each slice of bread with butter. Flip 4 of the slices over, so the butter is on the underside. Top the unbuttered side with ham, pineapple, mozzarella, oregano, chilli and basil. Season with salt flakes and freshly ground black pepper. Sandwich with the remaining bread slices, buttered side up.
Transfer sandwiches to jaffle maker and cook for 3-4 minutes until golden brown and the cheese has melted. Serve topped with extra basil leaves and chilli flakes.
HAM & CAULIFLOWER FRITTERS
MAKES 10-12
500g cauliflower florets
200g leftover ham, finely shredded
1 garlic clove, crushed
2 tbs finely chopped flat-leaf parsley, plus extra to serve
2 tbs finely chopped chives
¼ cup (20g) finely grated parmesan
¼ cup (10g) panko breadcrumbs
⅓ cup (50g) self-raising flour
4 eggs, lightly beaten
½ cup (125ml) extra virgin olive oil
Lemon wedges and toasted sourdough, to serve
Cook cauliflower in a large saucepan of salted boiling water until tender. Drain well and set aside to cool.
Place cauliflower in a large
