Don’t baste the dear little thing with port, just scoop from the middle with a spoon and save the last crusty bits for potting-up (as they did in Mrs Beeton’s day) with an equal volume of softened butter, a dash of tabasco and a slug of whisky or brandy; keep in the fridge and serve it with celery sticks or a crisp apple.
