We used a spicy sopressa salami, but for kids, try Danish or Hungarian styles.
SALAMI POLPOTTE
SERVES 4-6 PREP 20 MINS COOK 10 MINS
• 1 tbsp olive oil
• 1 onion, finely chopped
• 2 garlic cloves, crushed
• 500g beef mince
• 100g salami, finely chopped
• ½ cup fresh breadcrumbs
• ⅓ cup milk
• ½ cup grated parmesan, plus extra to serve
• 1 egg, beaten
• ¼ cup chopped parsley
• ½ cup red wine
• 800g can diced tomatoes
• 1 cup water
• 1 tbsp balsamic vinegar
• 2 tsp brown sugar
• cooked polenta, basil leaves, to serve
In a Large heavy-based saucepan, heat oil on medium. Saute onion and garlic 4-5 mins until onion is tender.
