SALAMI POLPOTTE

SERVES 4-6 PREP 20 MINS COOK 10 MINS

1 tbsp olive oil
1 onion, finely chopped
2 garlic cloves, crushed
500g beef mince
100g salami, finely chopped
½ cup fresh breadcrumbs
⅓ cup milk
½ cup grated parmesan, plus extra to serve
1 egg, beaten
¼ cup chopped parsley
½ cup red wine
800g can diced tomatoes
1 cup water
1 tbsp balsamic vinegar
2 tsp brown sugar
cooked polenta, basil leaves, to serve

In a Large heavy-based saucepan, heat oil on medium. Saute onion and garlic 4-5 mins until onion is tender.
