Strawberry Coulis

1 punnet strawberries, hulled & chopped

½ cup coconut sugar
2 tbsp lemon juice

1 cup whole pistachio nuts, shelled
1L tub plant-based coconut ice cream, softened & divided
1 portion Strawberry Coulis (see recipe above)
20 Leda Mini Rice Cakes, Mylk or Dark chocolate

Garnish

150g dark 70 per cent chocolate (ensure 15g freeze-dried strawberries, crushed 60g pistachio nuts, shelled & roughly chopped
