CAULIFLOWER PIZZA

SERVES 4-6 PREP 50 MINS COOK 20 MINS

1 head cauliflower, broken into florets
½ cup finely grated parmesan
1 egg, lightly whisked
1 tbsp white chia seeds
1 tsp Italian dried herbs
• 1 tbsp olive oil
1 chicken breast fillet
1 tbsp sun-dried tomato pesto
1 bunch asparagus, sliced, blanched
100g bocconcini, torn
¼ cup walnuts, chopped
grated zest ½ lemon
mint, micro herbs, to serve

1 Preheat oven to 200°C. Line an oven tray and a 25cm round pizza tray with baking paper.

2 Process cauliflower until it resembles rice. Transfer to oven tray and bake 15 mins. Cool.
