BEEF & LENTIL BOLOGNESE

• 1 tbsp olive oil
• 1 onion, finely chopped
• 1 carrot, finely chopped
• 2 garlic cloves, crushed
• 500g beef mince
• 2 tbsp tomato paste
• 2 tsp dried Italian herbs
• 700g jar passata
• 400g can lentils, drained, rinsed
• 400g spaghetti
• shaved parmesan, basil leaves, crusty bread, to serve
1 In a medium saucepan, heat oil on high. Saute onion, carrot and garlic 3-4 mins until tender.
Add mince. Brown 7 mins, breaking up lumps. Stir in paste and herbs. Cook, stirring, 1 min. Stir in passata and ½ cup water. Bring to boil. Reduce heat to low and simmer 8-10 mins. Stir in lentils. Simmer 1-2 mins until heated
