grew up in Belfast I still prize my mum’s roast dinners over any others. More potatoes. When I first came to England and made a roast dinner for my partner he was thrilled to discover that you would have two to three types of potatoes in a roast, rather than just one. I won’t eat a roast dinner unless there are at least two types, roast and mash, and then at Christmas we would often have three types.
