Mediterranean Picnic Baguette
SERVES 4 PREP 15 MINS
■ 1 large baguette (about 60cm)
■ ²⁄³ cup smooth ricotta
■ ²⁄³ cup basil pesto dip
■ 150g drained, roasted capsicum, cut into thick strips
■ 230g jar marinated, artichoke hearts, drained, quartered
■ 150g shaved mild salami
■ 150g shaved Maasdam cheese
■ 40g baby spinach and rocket mix
1 Using a serrated knife, cut baguette horizontally in half. Pull away the soft bread from inside each half, leaving about a 1cm-thick shell.
Spread ricotta, then pesto over the inside of both baguette
