PRAWN and PASTA BAKE
SERVES: 4-6 / PREPARATION AND COOKING: 35 MINS
500g orzo (pasta rice)
3T (45ml) olive oil, plus some extra
1 clove garlic, thinly sliced
1 can (400g) chopped tomatoes
½c (125ml) chopped spring onions
2 red chillies, deseeded and thinly sliced
700g whole queen prawns, peeled
1-2 rounds feta, crumbled
½c (125ml) finely chopped fresh basil
2T (30ml) lemon juice
salt and black pepper to taste
1 Cook the pasta according to the packet instructions for 5 minutes.
2 While the pasta is cooking, heat the oil in a large ovenproof pan and stir-fry the garlic for 1-2 minutes, until soft. Remove the pan from the heat.
3 Drain the cooked pasta and add to the pan, along with the tomatoes, spring onions and chillies. Stir gently to combine.
Layer the prawns on top of the pasta. Scatter the feta and most of the basil over. Sprinkle with lemon juice and season
