PEAR PERFECTION
MALVAPUDDING WITH POACHED PEARS
The pears are poached in rooibos syrup, then included in the malva pudding, a SA favourite. To save time, you can use canned pears.
SERVES 6-8 PREPARATION: 20 MIN COOKING: ABOUT 1 HOUR
PEARS
60ml (¼c) sugar
500ml (2c) rooibos tea
juice of 1 lemon
2 cinnamon sticks
4 pears, peeled
MALVA PUDDING
500ml (2c) cake flour
a pinch of salt
10ml (2t) baking powder
100g soft butter
250ml (1c) light brown sugar
2 eggs
45ml (3T) apricot jam
20ml (4t) vinegar
5ml (1t) bicarbonate of soda
200ml milk
SAUCE
125ml (½c) of the cooking liquid
60ml (¼c) brown sugar
60ml (¼c) each cream and milk
50g butter
10ml (2t) corn flour, mixed with 15ml (1T) water
TO SERVE
custard or ice cream
Preheat the oven to 170°C. Grease a large bread tin or a 20cm cake tin with nonstick spray.
