Right now, lots of delicious vegetables and fruits are in season, including asparagus, rhubarb and cauliflower. They’ve inspired me to create these tasty dishes full of vegetables. I hope that you’ll get inspired to organize a few meatless days, serving dishes full of taste and fresh ingredients.

Every year, rhubarb juice is a must here at our house. It’s easily made, using 4.2 cups (1 l) water for each 1.1 lb (½ kg)
