150 g (1 cup) wholemeal flour 1 teaspoon bicarbonate of soda 1 teaspoon baking powder ¼ teaspoon sea salt 250 ml (1 cup) soy milk 1 tablespoon 1 teaspoon vanilla extract 2 tablespoons maple syrup 6 medjool dates, pitted 1 tablespoon finely grated ginger 3 tablespoons olive oil vegan vanilla ice cream or natural coconut yoghurt, to serve
