CARROT DAY. We’re happy that carrots have a day because quite frankly they are unvalued as a sustainable pantry staple that can last for weeks when stored in the fridge in a breathable bag or cut up and in water (in the fridge) or blanched and then frozen.

Dandelion Day. Used for centuries in cuisines around the world, it’s time to rethink these pesky weeds and put them back on our menus. Forage for dandelions in locations where you are certain they haven’t been sprayed with toxic herbicides.
Good to know: Often used in traditional medicine for their ability to alleviate digestive ailments, dandelion flowers and roots are entirely edible too.
