TOMATO AND GOAT CHEESE PALMIERS
Makes about 48
8 ounces goat cheese, softened
½ cup sun-dried tomatoes,* finely chopped
1 tablespoon finely chopped fresh rosemary
1 teaspoon ground coriander
½ teaspoon kosher salt
1 large egg
1 tablespoon water
1 (17.3-ounce) package frozen puff pastry, thawed
ONE Preheat oven to 425°. Line 2 rimmed baking sheets with parchment paper.
In a small bowl, stir together goat cheese, sun-dried tomatoes, rosemary, coriander, and salt. In a small bowl, whisk together egg and 1 tablespoon water.
