Golden & red sauerkrauts

PREP TIME 45 MINUTES (+ 3–4 WEEKS FERMENTING) MAKES 12 CUPS

GOLDEN SAUERKRAUT

1 small white cabbage (1.2kg), halved
3 medium carrots (360g), peeled
2 cloves garlic, crushed
5cm piece fresh ginger, grated finely
5cm piece fresh turmeric, grated finely
2 teaspoons caraway seeds
2 teaspoons fennel seeds
1 tablespoon sea salt

RED SAUERKRAUT

1 small red cabbage (1.2kg), halved
2 medium beetroot (350g), peeled
2 cloves garlic, crushed
2 teaspoons cumin seeds
2 teaspoons juniper berries
1 tablespoon sea salt

1 Sterilise two 1.5-litre (6-cup) jars with lids.

For both golden and red sauerkraut, wash exterior of each cabbage, carrot
