Veggie & Brown Rice Timbales GF V

These wholesome timbales make a perfect healthy lunchbox addition. They’re packed with protein and fibre so your kids feel satisfied and less likely to crave sugary treats. This recipe is also a great way to get your kids to eat more veggies.

Serves: 12

Olive oil
1 small onion, finely chopped
1-2 garlic cloves, crushed & chopped
3 cups mixed vegetables (peas, corn kernels, spinach, small pieces broccoli or cauliflower)
1 cup cooked brown rice
6 organic eggs
⅓ cup organic milk
⅓ cup grated Cheddar cheese
Pumpkin seeds, for topping

1. Preheat oven to 200°C and grease a 12-hole muffin tray with a little olive oil.

2. Heat a little olive oil in a frying pan on medium heat. Add onion and garlic and cook for a few mins before adding the vegetables. Cook until tender.

3. Add cooked rice to the pan and gently combine.

4. In a medium bowl, whisk eggs and milk and then stir through cheese.

5. Spoon vegetable and rice mixture evenly out into the muffin holes, then pour egg mixture over the top of each.

6. Sprinkle with pumpkin seeds and then put in the oven for 30 mins until timbales are cooked through, or when a skewer comes out of the centre cleanly.
