IN SEASON: PARSNIPS + SWEDES

Hearty parsnip soups, parsnip bakes and creamy parsnip mash are popular in cooler months, and in recent years, parsnip fritters and chips, double-baked parsnip soufflés, savoury parsnip tarte tatin and even parsnip gnocchi have appeared on menus around the country.
