Serves 4 Takes 38-40 minutes, plus pickling time

INGREDIENTS

For the pink onions

• 1 red onion, peeled and very finely sliced
• 4 tbsp lime juice
• 4 tbsp white wine vinegar

For the onion bhaji

• 1 large onion, peeled, halved and finely sliced
• 100g/4oz plain flour
• 1 tbsp garam masala
• 2 tbsp oil

For the coronation sauce

• 4 tbsp plant-based mayonnaise• 2 tsp mild curry powder• ¼ tsp cinnamon• 1 tbsp mango chutney• 1 tbsp
