CHICKEN STIR-FRY WITH SATAY SAUCE

With plenty of vegetables and protein, this is the perfect quick supper for two people – really good fast food. It could also be served with rice or noodles, if you like. The satay sauce is a cracker and the whole dish will thrill your taste buds.

PER SERVING

510 cals, 22g fat, 4g sat fat, 23g carbs

SERVES 2

2 chicken breasts

1 heaped tsp cornflour

1tbsp rice wine vinegar

2tsp neutral-tasting oil

1 shallot, finely sliced

100g (3½oz) green cabbage, shredded

200g (7oz) asparagus spears, trimmed and cut into sections

100g (3½oz) mangetout, trimmed and sliced at an angle

100g (3½oz) baby corn, halved lengthways at an angle For the satay sauce:

100ml (3½fl oz) chicken or vegetable stock

10g (½oz) root ginger, finely chopped

2 garlic cloves, finely chopped

1tbsp lime juice

1tbsp soy sauce

1tsp runny honey

2tbsp peanut
