CHICKEN STIR-FRY WITH SATAY SAUCE
With plenty of vegetables and protein, this is the perfect quick supper for two people – really good fast food. It could also be served with rice or noodles, if you like. The satay sauce is a cracker and the whole dish will thrill your taste buds.

SERVES 2
✣ 2 chicken breasts
✣ 1 heaped tsp cornflour
✣ 1tbsp rice wine vinegar
✣ 2tsp neutral-tasting oil
✣ 1 shallot, finely sliced
✣100g (3½oz) green cabbage, shredded
✣200g (7oz) asparagus spears, trimmed and cut into sections
✣100g (3½oz) mangetout, trimmed and sliced at an angle
✣100g (3½oz) baby corn, halved lengthways at an angle For the satay sauce:
✣100ml (3½fl oz) chicken or vegetable stock
✣ 10g (½oz) root ginger, finely chopped
✣2 garlic cloves, finely chopped
✣ 1tbsp lime juice
✣ 1tbsp soy sauce
✣ 1tsp runny honey
✣2tbsp peanut
