SWEET POTATO MASH

Serves 4-6
1.5kg small sweet potatoes, unpeeled
Sea-salt flakes and freshly ground black pepper, to season
STEP 1 Preheat oven to 190°C fan-forced (210°C conventional).
Arrange sweet potatoes on a lined oven tray and bake for 45-55 minutes, until caramel starts to seep from their sides.
STEP 2 While they’re still hot, halve sweet potatoes using a wet knife and scoop out flesh. Press through a fine sieve and season.
STEP 3 Cook in a medium saucepan on medium heat for 4-6 minutes, until excess water has evaporated. Serve.

1 cup brown sugar, plus extra ½cup
Finely grated zest and juice of 2 lemons
375ml can dry craft cider
2½Tbsp cornflour, dissolved in 2½Tbsp water
6 firm pears (Beurre Bosc, William
