Top tip:
If you don’t have canned coconut milk, you can use any kind of plant milk you have on hand, the batter just won’t be quite as rich and thick.
If you have a light bread like thickly sliced sandwich bread, we don’t recommend soaking it. If the bread is heartier, you can soak it for 5-8 seconds per side, just be careful not to oversoak.
Vegan French Toast
Serves 2
The best-ever vegan French toast recipe, made with coconut milk and spices. It’s seriously delicious and ready in minutes!
• 240ml (8fl oz) coconut milk (full fat, from a can)
• 2 tbsp all-purpose (plain) flour
• 1 tsp ground cinnamon
• 1 tsp vanilla essence
• 1 tbsp sugar
• 4-5 slices thick bread
1 Mix together the coconut milk, flour, cinnamon, vanilla and sugar until smooth.
2 Heat a lightly oiled pan over medium heat and wait until it’s hot.
3 Dip bread in batter on both sides and gently shake off any excess, then place on the pan. Cook for 2-5 minutes per side, or until browned and crispy. If you find the bread is browning too fast, turn down the heat a bit to help all the batter cook throughout.
4 Repeat with remaining slices and serve with maple syrup and toppings of choice!
