Hare, like venison, can be broken down into first-class and second-class cuts. The first-class cuts are tender, while second-class are tougher. But, unlike venison, hare only has one first-class cut — the saddle.

Hare saddle is an incredible cut. It can be trimmed and cooked on the bone, or taken off the bone and pan-fried or cooked on a griddle.
