This San Choy Bau tray bake packs in flavour with a fraction of the fat. It’s got everything we love about the Chinese fave, but with brown rice to make it more substantial. Swap the pork for beef or chicken, if you prefer.

baked san choy bau ‘fried’ rice

serves 4 | prep 10 mins (+ cooling) I cooking 1 hour E

300g (1½ cups) brown rice
250g Lean pork mince
1 carrot, peeled, coarsely grated
2 garlic cloves, crushed
2 tsp finely grated fresh ginger
60ml (¼ cup) hoisin sauce
2 tbs soy sauce
