GET FIRED UP!
BACON BRAAI BROODJIE WITH TOMATO SOUP IN A POTJIE
My kids love anything done outside on the braai because it allows them to have fun outside while I do my thing. Bacon and cheese are already a winner but I added the tomato soup for the perfect winter warmer.
SERVES 4 PREPARATION AND COOKING: 1½ HOURS
TOMATO SOUP
30ml (2T) olive oil
3 whole onions, diced
4 garlic cloves
4 cans (400g each) whole peeled tomatoes
2 tins (70g each) tomato paste
500ml (2c) chicken stock salt and pepper
BRAAI BROODJIE
1 packet streaky bacon salted butter, for spreading
1 loaf good-quality sourdough, sliced into
1cm slices
½ onion, thinly sliced 6 slices Boerenkaas or cumin cheese, cut into thick slices
25g petite herbs, to garnish
salt and black pepper
Over the coals, heat a potjie pot to medium heat.
1 Tomato soup Add the oil and fry the onions and garlic until caramelised and translucent.
2 Add the tomatoes, tomato paste and chicken stock, and bring to the boil. Reduce the heat and simmer for 30 minutes.
